This single origin coffee is grown on the Serra da Mantiqueira mountain range in Brazil, near the small town of Conceição das Pedras.
This coffee was natural processed, where the whole coffee cherries are left to dry in the sun for several weeks. This type of processing lets the beans slightly ferment and pick up flavors from the fruit and sugars, leading to a more complex and nuanced taste.
The varietal of this coffee, Yellow Catuai is unique to the country of Brazil. It is a cross-breed of the "Yellow Caturra" and "Mundo Novo" varietals. The cherry has a signature yellow color to it. The Yellow Catuai varietal is sweet with medium acidity, with other flavor notes coming from the soil, elevation, and climate. "Catuai" comes from the indigenous language of Guarani translating to “very good.”
